The BEET in me: Apple Beet Goat Cheese Napoleon

Forget everything you ever knew about beets, and try this recipe. I guarantee you will never look at beets the same way. With the first bite, the flavors will pop in your mouth. First experiencing sweet and sour from the apple, then along comes the earthy beet flavor followed by the creamy goat cheese and buttery cashews to finish with the tangy dressing. Are you drooling? This is a fantastic salad to wow your guests. Enjoy!

Apple Beet Goat Cheese Napoleon

Serves: 6

1 tablespoon Honey or Agave
1 tablespoon apple cider vinegar
1 tsp Dijon mustard
2 tablespoons of olive oil
Salt and pepper to taste
Cashews, chopped
8 ounces goat cheese, crumbled
Granny Smith apples, sliced thin, placed in lemon water
Beets, sliced thin

Combine the first five ingredients in a mixing bowl. Blend well and set aside.

Begin to build the napoleon by placing an apple slice followed by a beet slice, followed by cheese and repeat layers until it is three layers high. Drizzle with the dressing and garnish with a few cashews.
