FOOD FOR THE SOUL: Yummy Yummy Vegan Brownies

Yummy Yummy Vegan Brownies
Ingredients: (Makes 12-16 brownies)
- 1 cup unbleached all-purpose flour
- 1 cup whole wheat pastry flour
- 2 cups brown sugar
- 1 ½ cup nondairy dark chocolate bars or chips
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon salt
- 3 cups soy milk (vanilla)
- 1 teaspoon vanilla extract
- ¾ cup vegetable oil
Preparation:
Preheat oven to 350°F. Lightly oil an 8-inch baking pan. Melt chocolate on stovetop, and add 1 cup soy milk while melting. Melt on low heat, stirring frequently to avoid burning. The chocolate/soy milk mixture will melt quickly.
In a bowl, combine flour, sugar, cocoa powder, baking powder and salt. In another bowl, combine remaining soy milk, oil and vanilla extract.
Fold wet ingredients into dry ingredients and mix well. Add melted dark chocolate to the mixture. Pour mixture into the baking pan and bake for 30 minutes. You will be able to tell that the mixture is done by sticking a toothpick in the middle; if it comes out clean, the brownies are done.
