TLT: Tempeh, Lettuce, Tomato

It’s back to campus for the kiddos. And what better way to kick the school year off right than with a healthy lunch? This is our vegan take on the classic BLT. It’s healthy, easy, and oh so delicious!
INGREDIENTS (Serves 1)
- 1/2 tablespoon vegan mayonnaise (I like Vegenaise)
- 1 squirt mustard
- 2 slices smoked tempeh (I like the Lightlife brand Fakin’ Bacon)
- 4 slices Roma tomato
- 2 lettuce leaves
- 4 slices avocado
- 2 slices whole wheat bread
Lightly toast the whole wheat bread in the toaster. Spread the vegan mayonnaise and the mustard on both sides of the bread. Add the remaining ingredients. Slice in half and serve immediately.
