Food for the Soul – Tamarind Chicken

• 2 tablespoons lime juice
• 2 tablespoons B. Smith’s Extra Virgin Olive Oil
• 2 tablespoons unsweetened tamarind paste
• 2 tablespoons molasses
• 3 cloves garlic, minced
• 4 skinless, boneless, chicken breast halves
In a small bowl, whisk together the lime juice, olive oil, tamarind paste, molasses and garlic. Season the chicken breasts with salt and pepper and place in a heavy-duty sealable plastic bag. Pour the marinade over chicken, seal the bag and marinate at least 2 hours. Heat in outdoor grill or use a grill pan on the stove. Remove the chicken from the marinade. Grill chicken over medium-high heat for 5-6 minutes on each side, until cooked through. Set aside to cool. This can be served warm as well. Serves 4
