FOOD FOR THE SOUL: Black Rice Salad

This magnificent salad, made of rice and vegetables, carries an authentic character with elements that mesh beautifully to create a colorful, filling, spicy and satisfying meal. Makes 3-4 Servings
WHAT YOU’LL NEED
1/2 cup cooked long grain white rice
1 cup cooked black rice
Juice of half a lemon
4-5 handfuls of fresh peas (out of pod), cooked in boiling and slightly salted water for 5-7 minutes, drained, rinsed under cold running water and set aside to cool
1 carrot, peeled and diced
1 zucchini, cleaned and diced
1/2red onion, diced
1 garlic clove, minced
1/2 orange bell pepper diced
1 ripe mango, diced
2 small handfuls roasted Pistachios
1 teaspoon of coconut oil
1 tablespoon nori flakes
1 tablespoon Cajun Crazy Spice
Sea salt and fresh ground pepper to taste
MAKIN’ IT
Boil rice in 3 1/2 cups of water until softened. Remove from heat and let cool, uncovered.
Make sure the rice is still al dente when you drain it. Rinse it under cold running water, and transfer it into a salad bowl. Add the lemon juice and coconut oil, and refrigerate until it’s completely cold.
To assemble your rice salad, remove the rice from the fridge and add all the vegetables, mango, nori, Pistachios, sea salt, fresh ground pepper and Cajun Crazy Spice. Then toss it up!
Serve cool or at room temperature and let your soul be satisfied!
