Fusion happens to be my favorite cuisine, and Jamaican food lends to it like no other. Talk about tantalization: this jerk shrimp recipe will have your tongue seeing colors! This dish is not only delicious and colorful, it brings a taste of the island no matter what part of the world you’re in!

Makes 12 Servings
WHAT YOU’LL NEED
1/2 cup of your favorite Caribbean jerk seasoning
1/2 tablespoon coconut oil
1 1/2 teaspoons peeled and finely chopped fresh ginger
1 pound large shrimp, peeled and deveined
Sea salt and fresh ground pepper to taste
1 tablespoon chopped fresh cilantro, add more for garnish
For the Mango, Red Onion & Cilantro Salsa
2 ripe mangos, diced
1 cup red onion, finely diced
2 tablespoons chopped fresh cilantro
1 jalapeño, Serrano or habanero pepper, seeded and chopped
Juice of 2 limes
2 teaspoons grated lime zest
1/2 teaspoon sea salt to taste
MAKIN’ IT
Note: This is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches, and then mix everything together in a large mixing bowl.
1. Combine whole tomatoes, onion, jalapeño, garlic, salt, Cajun Crazy Spice, lime juice, and cilantro in a blender or food processor.
2. Pulse until you get the salsa to the consistency you’d like – I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
3. Refrigerate salsa for at least one hour. Serve with your favorite tortilla chips!
