WHAT YOU’LL NEED
2 filets fresh red snapper
1 pound medium uncooked freshwater shrimp
6 tablespoons avocado oil
2 tablespoons Celebrity Chef Dominique’s Crazy Cajun Spice
For the fresh watermelon salsa
2 cups watermelon
1 1⁄2 cups heirloom tomatoes
1⁄2 cup English cucumbers
1 bunch fresh cilantro
3 fresh mint leaves
1⁄2 cup scallions
1⁄2 cup red onion
1⁄2 cup jalapeno peppers
2 lemons
4 tablespoons avocado oil
2 tablespoons Celebrity Chef Dominique’s Crazy Cajun Spice
Sea salt to taste
Freshly ground black pepper to taste
MAKIN’ IT
1. Cut snapper into four serving size portions.
2. Season snapper fillets and freshwater shrimps well with Dominique’s Cajun Crazy Spice.
3. Add 5 tablespoons of avocado oil, and pan sear the snapper fillets for 3-4 minutes on each side; remove and finish off in a 375 degree oven for 5-6 minutes.
4. Add 1 tablespoon avocado oil and shrimp to hot pan and sauté for 2 minutes.
5. Combine watermelon, heirloom tomatoes, English cucumbers, cilantro, mint, scallions, red onions, jalapenos, lemon juice, avocado oil, salt and pepper to taste.
6. Arrange on a server plate beautifully, adding watermelon salsa for a great fresh taste and garnish.
