Flank steak with fresh arugula: Keepin’ It Real, Fresh and Simple!

Flank steak with fresh arugula

The weather is warming up, and that means it’s time to fire up the pit and get grilling! Grilling is real quick, doesn’t leave many dishes, makes cooking for a crowd easy, and enhances tastes making for a phenomenal meal. Even better, grilling is one of the leanest ways to cook.

Its all about keepin’ it real and simply delicious! This is one of my client Kobe Bryant’s favorites! Try it out and make it one of your favorites.

What You’ll Need!

(makes 3-4 servings)

  • 1 flank steak, 11/2 to 2 pounds and about 3/4 inch thick
  • Extra-virgin olive oil
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 1 tablespoon Chef Dominique’s Crazy Cajun Spice
  • 1/2 cup balsamic vinegar
  • 1/2 teaspoon granulated sugar
  • 6 cups loosely packed baby arugula
  • 1 cup loosely packed shaved Parmigiano-Reggiano cheese

Makin’ It!

  1. Brush the steak on both sides with extra virgin olive oil and season evenly with salt and pepper and Chef Dominique’s Crazy Cajun Spice. Allow the steak to stand at room temperature for 15 to 30 minutes before grilling.
  2. Prepare the grill for direct cooking over high heat (450Åã to 550ÅãF).
  3. In a small saucepan over medium-high heat, combine the vinegar and sugar. Allow the mixture to reduce by half, 6 to 8 minutes, stirring occasionally. Remove from the heat and let cool.
  4. Brush the cooking grates clean. Grill the steak over direct high heat, with the lid closed as much as possible, until cooked to your desired doneness, 6 to 8 minutes for medium rare, turning once or twice (if flare-ups occur, move the steak temporarily over indirect heat). Transfer to a cutting board and let rest for 3 to 5 minutes.
  5. Cut the steak in half lengthwise and then cut each half across the grain into thin slices; divide evenly on serving plates. Pour any juices remaining on the cutting board over the steak, and pile the arugula on top. Drizzle each serving of arugula with oil and the balsamic reduction, season with salt and pepper, and top with the cheese.
