Southern-style Kale Greens
Kale greens rank high in nutritional density, and they are easier to digest than collard greens. Most people think that greens have to be prepared with meat to be tasty, but this couldn’t be further from the truth. These greens are tasty, tender and the flavor will “make you wanna slap ya mama!” (And for the record, I love my mama!) Enjoy!
Ingredients: (Serves 4)
- 2 bunches kale greens, washed and chopped small
- ¼ cup nutritional yeast (purchase at Whole Foods Market)
- 1 tablespoon apple cider vinegar
- ¼ cup Bragg’s Liquid Aminos
- 2 tablespoons onion, chopped
- 2 teaspoons fresh garlic, minced or 1 teaspoon garlic powder
- 1 pinch black pepper
- 1 tablespoon Earth Balance Soy Margarine
- 1 tomato – sliced or diced (optional for garnish)
- ¼ onion – sliced or diced (optional for garnish)
Preparation:
Add approx ½ cup water with onions, Liquid Aminos, apple cider vinegar and garlic to pot. Allow to warm. Add greens and cook on medium-low heat until almost tender (approx. 20 minutes). After 20 minutes, add nutritional yeast and soy margarine and cook another 10 minutes or until tender. Serve warm with fresh sliced tomatoes and onions.
