Thai Basil Spring Rolls

INGREDIENTS (serves 2)
- 4 rice paper spring roll wrappers
- 1 medium carrot, julienned
- 1 cup green cabbage, shaved thin
- 1/2 cucumber, seeded and julienned
- 1/4 cup fresh thai basil, whole leaves
- 1/4 cup fresh mint, whole leaves
- 1/4 cup fresh cilantro (whole leaves)
- 2 cloves fresh garlic, minced
- 2 tablespoons scallions, chopped small
- 1 teaspoon extra virgin olive oil
- Sesame seeds (for garnish)
DIRECTIONS
Mix all ingredients (except spring roll wrappers) in a bowl and set aside. Place spring roll wrappers (one at a time) in another bowl of lukewarm water until semi-soft (about 30 seconds). Remove and lay on clean flat surface. Spoon 2 tablespoons of the mixture in the spring roll wrappers and seal by rolling the wrappers around the mixture. Lightly spread olive oil on the top of the wraps and sprinkle with sesame seeds. Serve with sweet chili sauce.
